Gift Jar Brownies
This new post is dedicated to the homemade gift. Except this one is gloriously gluten-free. For years I have been giving them for Christmas gifts. If you don’t celebrate Christmas they still make fantastic gifts. They are fun, personable, and unique. Before gluten-intolerance I basically gave the same homemade Christmas candy every year. But once I was forced to rock it sans gluten my imagination really started to take off. So did the packaging. Gift Jar Brownies!
Brownies mix in a jar is ever so much fun. Add oil and eggs and you have gluten-free brownie perfection. They bake up in to the brownies featured above. It is a fool-proof holiday gift.
This gift would be perfect under the Christmas tree, or for a great host or hostess gift.

Gift Jar Brownies (Gluten-Free)
1/4 cup millet flour
1/4 cup tapioca starch
1/4 cup rice flour
1 tsp. baking powder
1/2 tsp. salt
1/8 tsp. xanthan gum
1 cup cocoa
2 tsp. espresso powder
1 1/4 cups sugar
1/2 cup each chocolate chips and coarsely chopped pecans (or 1 cup chocolate chips)
Mix together each layer at a time and spoon carefully in jar, spreading evenly.
Attach instructions to gift jar:
Preheat oven to 350 degrees F. Prepare 8-inch square pan by spraying with oil and lining with parchment paper.
Whisk together 1/2 cup vegetable oil, 3 eggs, 2 Tbsp. hot water and 1 tsp. vanilla. Pour dry ingredients into large bowl and stir in the liquid ingredients. Bake for 35 minutes, or until toothpick inserted in center comes out clean. Cool and cut into squares.
