Get your chive on. Summer is just around the corner which means it will be time to entertain friends and family. Late nights on the patio with food and laughter. Staying up late and catching up on old memories, or watching your children giggle and laugh outside catching fireflies.
During the spring I always look forward to planting a herb and vegetable garden. The herbs are my favorite part and chives in particular are one of my favorites. Chives grow like crazy and are bursting with flavor when you grow them yourself. You can literally start using them about two weeks after you plant them and will grow back lickety split.
Recently we had relatives stay from India. They are from my husband’s childhood town of Ranchi which is a hill station and where my father in law started the first coal mine in the area. We got to enjoy some seasonal foods from our vegetable garden which became the highlight of the meal despite all of the Indian food I made for the main course. After all, when arugula is ready to be harvested it is actually wonderfully spicy. Who knew?
This recipe is perfect for summertime entertaining and they would go perfect with cocktails before dinner. Summer fun leads to a delayed dinner and snacks are usually in order. Pair with your favorite gluten free crackers or baguette. So long junk food..make this in no time at all.
Chive,Goat Cheese, Bacon and Dates Appetizer Recipe
4 ounces goat cheese
4 slices bacon
1/4 cup finely chopped dates
Crackers or baguette slices
Chopped chives for garnish
Soften goat cheese in microwave safe bowl for 30-45 seconds on high. Fry bacon until crisp and drain on paper towel. Crumble.
Add crumbled bacon and chopped dates to goat cheese and stir until well blended. Spread on crackers or baguette slices and top with chopped chives.
