Here in the Commonwealth of Virginia September is downright fabulous. It is a glorious time caught between the seasons of summer and fall. A stream of sultry southern heat starts to intermix with days that are 70-75 degrees F. Suddenly my vegetable garden starts producing it’s last offerings for the year, and I venture outside for long walks once again. The trees slowly begin to change in to glorious stages of orange and yellow and stacks of hay and pumpkins festoon porches and stoops in the neighborhood.
As the seasons switch it is a fun time to embrace the new and let go of the old. Cowboy boots instead of flip flops, arm warmers instead of tank tops, and planning on what we will pass out for Halloween. Last year we joined the teal pumpkin movement and will be passing out non-edible goodies once again. This year is sparkle glue in different colors. That way little ones with dangerous nut allergies, wheat, gluten, and everything else can take part in the fun
This vegetable soup is positively perfect for a cool fall day. My vegetable garden is still producing a bit and I still have a bounty of fresh herbs, and various vegetables including spinach. Soup and cool weather just go together perfectly. Like chocolate and peanut butter.
This soup is bursting with nutrients and if that is not good enough it is vegan, dairy free, gluten free, and still is delicious. Your veggies can taste great after all.
1 1/2 pounds leeks, sliced, triple washed and drained
1/4 cup chopped chives
2 Tbsp. coconut oil
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. ground chipotle seasoning
1 medium potato, shredded
4 cups chicken broth
2 cups chopped fresh spinach
In a large Dutch oven, sauté leeks and chives in coconut oil until tender. Add seasonings, shredded potato and chicken broth and simmer until potato is very soft.
Remove from heat and stir in chopped spinach. Puree in food processor or blender until smooth. Serve warm with or without a dollop of sour cream or Greek yogurt. (For dairy free skip the garnish)
